Potato, Tomato And Bacon Bake - cooking recipe

3-4 tbsp oil
2 lbs potatoes, peeled and thinly sliced
2 tsp Italian herb seasoning
4 oz bacon slices
1 None red onion, peeled and cut into rings
1 3/4 lb mixed tomatoes, sliced
3/4 cup Emmental cheese, grated
8 sprigs fresh oregano, leaves stripped from stems

Preheat the oven to 400\u00b0F. Brush a baking sheet with oil. In a large frying pan, heat a little of the oil and fry the potato slices in batches, adding more oil as necessary, for 6-8 mins, until golden. Sprinkle over the Italian seasoning and season with salt and black pepper. Spread onto the baking sheet and bake for 10 mins.
Heat a separate frying pan and cook the bacon for 2 mins on each side. Remove the baking sheet from the oven and lay the bacon slices over the potatoes. Top with the onion rings and tomato slices. Season with salt and black pepper and sprinkle over the cheese and half the oregano. Bake for 10 mins. Sprinkle with the remaining oregano.
