Linguini With Walnut Sauce - cooking recipe

Ingredients
    4 tbsp olive oil
    1/4 lb walnuts
    2 slices white bread, torn into pieces
    3/4 cup heavy cream
    1 lb dried linguini
    1 1/4 lb broccoli florets
    2 cloves garlic, minced
    2 tsp fresh oregano, chopped + extra leaves to garnish
Preparation
    Heat 1 tbsp oil in a frying pan. Add walnuts and fry until lightly browned. Remove from heat and set aside to cool. Meanwhile, soak bread in cream.
    Cook pasta in boiling, salted water for 8 mins. Add broccoli and cook for another 2 mins or until broccoli and pasta are just tender. Drain, reserving 3 tbsp pasta water.
    Meanwhile, place garlic, nuts, soaked bread and chopped oregano in a small food processor and blend until smooth. Add remaining olive oil and reserved pasta water and blend again briefly. Season. Toss with pasta and broccoli. Transfer to serving plates and garnish with oregano.
