Cheesy Broccoli And Tortellini Bake - cooking recipe

12 oz spinach or cheese tortellini
1 head broccoli (1 1/2 lbs), cut into florets, stem thinly sliced
1 cup Gorgonzola cheese, crumbled (4 oz)
3/4-1 cup half-and-half
1/4 cup grated Parmesan cheese

Preheat the oven to 400\u00b0F. Coat a large baking dish with cooking spray. Cook the tortellini according to the package directions until just tender. Drain. Cook the broccoli in a saucepan of boiling salted water for 3-4 mins. Drain. Set aside one-third of the broccoli. Mix the remaining broccoli with the Gorgonzola and half-and-half in a large bowl.
Transfer the broccoli-cheese mixture to a food processor and blend until smooth. Return to the large bowl, then stir in the tortellini and reserved broccoli. Transfer the mixture to the baking dish and sprinkle with the Parmesan. Bake for 10-15 mins until hot.
