Spiral Sandwiches - cooking recipe

Ingredients
    1 None large avocado, peeled, stone removed
    2/3 cup reduced-fat cream cheese, at room temperature
    1 tbsp lemon juice
    1 loaf unsliced white bread
    7 oz sliced ham
    1 None large carrot, finely grated
Preparation
    Mash avocado, cream cheese and juice in a large bowl until smooth. Using a large serrated knife, remove crust from bread. Cut bread lengthwise into 4 equal slices. Using a rolling pin, flatten each slice to about 1/4 inch thick.
    To make 5 spirals, spread a piece of bread with a quarter of the avocado mixture, leaving a 1/4 inch border. Top with a quarter of the ham, in a thin layer, overlapping ham slightly. Top with a quarter of the carrot, in a thin layer. Roll up to enclose filling. Cut into 5 equal slices. Repeat with remaining bread and ingredients.
