Ginger Pork Skewers With Wasabi Mashed Potatoes - cooking recipe

Ingredients
    14 oz pork leg steaks, cut into 3/4 inch pieces
    3 tsp grated ginger
    1/3 cup teriyaki sauce
    1 tbsp honey
    1 None medium onion, cut into wedges
    1 None medium red pepper, deseeded, cut into 1 inch pieces
    2 None medium zucchini, cut into thick rounds
    1 tbsp sesame seeds
    None None Olive oil cooking spray
    14 oz pink-skinned potatoes, peeled and quartered
    1/2 cup cream
    3 tsp wasabi paste
    None None Lime wedges, to serve
Preparation
    Place pork in a glass or ceramic bowl. Add ginger, teriyaki sauce and honey; turn to coat. Thread onion, pepper, zucchini and pork onto 8 skewers. Sprinkle with sesame seeds and spray skewers with oil.
    Preheat a barbecue or griddle pan. Cook and turn skewers for 3-4 mins or until cooked. Transfer to a plate, cover with foil and allow to rest for 5 mins.
    Meanwhile, place potatoes in a large saucepan and cover with cold water. Bring to a boil. Boil for 10-12 mins or until tender, then drain and return to pan. Add cream and wasabi and mash until smooth. Season to taste.
    Serve pork skewers with wasabi mashed potatoes and lime wedges.
