Orange Coriander Muffins - cooking recipe

Ingredients
    1 3/4 cups all-purpose flour
    1 tbsp baking powder
    1 tsp ground coriander
    5 1/2 tbsp chilled butter, grated
    1/2 cup light brown sugar
    2/3 cup milk
    1 None egg, beaten
    1 None large orange, zested, peeled, flesh chopped
    2 tsp coriander seeds, crushed
Preparation
    Preheat oven to 400\u00b0F. Grease a 12-cup muffin pan and line with paper liners.
    Sift together flour, baking powder and ground coriander into a large bowl. Add butter, sugar, milk, egg and orange zest. Mix until just combined. Fold in chopped orange flesh and crushed coriander seeds. Distribute between paper liners and bake for 20-25 mins, until golden brown. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
    Serve warm or cold.
