Chicken Pho - cooking recipe

Ingredients
    2 cups chicken stock
    2 tsp fresh ginger, grated
    1 None cinnamon stick
    2 tsp fish sauce
    2 tsp soy sauce
    2 - 3 oz chicken filets, thickly sliced
    1 tbsp lime juice
    3 oz rice noodles, soaked in boiling water for 5 mins then drained
    1 1/4 cups fresh cilantro leaves
    1 1/4 cups beansprouts
    1 None small red chili, thinly sliced
    1 None spring onion, thinly sliced
Preparation
    Bring stock, ginger, cinnamon stick, fish sauce, soy sauce and 1 cup water to a boil over high heat, cover, reduce heat to low and simmer 5 mins. Discard cinnamon stick. Add chicken and lime juice and cook for 2 mins, or until chicken is cooked through.
    Divide noodles and chicken between 2 serving bowls. Ladle hot stock over noodles and serve topped with cilantro, sprouts, chili and onion.
