Roasted Chicken On Toasted Sourdough - cooking recipe

Ingredients
    1 loaf sourdough bread, cut into 8 slices, toasted
    8 slices bacon
    5 oz roasted chicken meat
    1/4 cup mayonnaise
    1 tbsp whole grain mustard
    8 None large iceberg lettuce leaves, chopped
    4 None spring onions, trimmed, chopped
    12 None cherry tomatoes, chopped
    12 None fresh basil leaves
    2 tbsp snipped fresh chives
    1 tbsp chopped fresh parsley leaves
    1 None avocado, pitted, peeled, chopped
    1 None lemon, for squeezing
    None None hot chili sauce (optional)
    None None hot chilli sauce (optional)
Preparation
    Cook bacon until golden and crisp. Drain on paper towels.
    Spread mayonnaise and mustard over bread. On 4 slices, stack lettuce, spring onions and tomatoes. Season. Add herbs then chicken. Add avocado then squeeze a little lemon juice over top. Sprinkle with hot chili sauce, if using. Top with bacon then sandwich with remaining bread.
    Serve immediately.
