Ingredients

1 cup rolled oats
1/2 cup cold butter, chopped
1/2 cup whole wheat flour, sifted
2 tbsp all-purpose flour, sifted
1/4 tsp baking soda
1 1/2 tbsp brown sugar
1 tbsp milk
7 oz Cheddar cheese, cut into small squares
1 1/4 cups fig jam
Preparation

Preheat oven to 325\u00b0F. Grease 2 baking trays.
Process oats until in a food processor until finely chopped. Add butter and dry ingredients and pulse until crumbly. Add milk and process until mixture comes together. Transfer to a lightly floured work surface and knead until smooth.
Divide dough in 1/2 then roll each portion out until 1/8 inch-thick. Cut into 1 inch squares. Arrange on prepared trays and bake for 15 mins, or until golden brown. Let cool on trays for 5 mins then transfer to wire racks to cool completely.
Serve topped with a small piece of cheese and a little jam.
