Ingredients

1 1/2 tbsp vegetable oil
1/2 None red onion, finely chopped
1 lb ground turkey
1/3 cup dried breadcrumbs
1 None large egg, lightly beaten
1 tbsp chopped fresh marjoram leaves
2 tsp capers, chopped
2 tsp Dijon mustard
4 None bread rolls, split
1 tbsp red currant jelly
None None potato salad, to serve
None None FOR THE SLAW
1/4 head red cabbage, finely sliced
1 None red onion, finely chopped
2 tbsp mayonnaise
None None FOR THE PICKLED ZUCCHINI
1 None large zucchini, sliced into ribbons
1 tbsp chopped fresh dill
2 tsp red wine vinegar
1 tsp sugar
Preparation

To make the turkey burgers, heat 2 tsp oil in a small frying pan over medium heat. Saute onion for 2-3 mins, until tender. Transfer to a bowl and let cool.
Add ground turkey, breadcrumbs, egg, marjoram, capers and mustard. Season. Shape into 4 flattened patties. Cover and chill until required.
To make the slaw, combine cabbage, onion and mayonnaise in a bowl. Season to taste.
To make the pickled zucchini, combine zucchini, dill, vinegar and sugar in a bowl.
Heat remaining oil in a frying pan over medium heat. Fry patties for 4-5 mins per side, or until cooked through. Drain on paper towels.
Spread red currant jelly over rolls. Fill with slaw, patties and pickled zucchini. Serve with potato salad.
