5 None large beets, cooked, peeled, chopped
1 None large red onion, finely sliced
6 None sprigs thyme, plus extra, to serve
1/3 cup balsamic vinegar
2 tbsp brown sugar
2 tbsp olive oil
4 oz fresh breadcrumbs
4 oz crumbled feta
1 None lemon, zested
Preparation

Preheat oven to 400\u00b0F. Lightly grease a shallow 8-cup ovenproof dish. Place beets, onion, thyme, vinegar and sugar in a roasting dish. Drizzle with oil and toss to coat. Season to taste. In a bowl, combine breadcrumbs, feta, oil and lemon zest. Season to taste. Sprinkle evenly on beet mixture. Roast 20-25 mins, until topping is golden and crisp. Sprinkle with extra thyme to serve.
