Warm Balsamic Mushroom And Pancetta Salad - cooking recipe

Ingredients
    8 slices pancetta
    1/2 cup store-bought balsamic dressing
    1 lb small button mushrooms
    1 tsp fresh thyme leaves
    4 cups mixed baby lettuce leaves
    3/4 cup crumbled feta cheese
Preparation
    Heat large oiled skillet on medium heat. Add pancetta; cook until crisp. When cool enough to handle, break into large pieces.
    Heat the dressing and 1/3 cup water in the same skillet. Add mushrooms and thyme; cook, stirring, until mushrooms are tender and liquid has almost evaporated. Season to taste. Cool slightly.
    Combine the mushrooms, lettuce leaves and pancetta in a large bowl and toss gently. Serve topped with cheese.
