Chili Con Carne With Cheesy Nachos - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 None medium onion, finely chopped
    2 cloves garlic, minced
    2 tsp ground cumin
    1/2 tsp Cajun spice mix
    1 1/2 lb ground pork
    1 (13.5 oz) can chopped tomatoes
    1 (13.5 oz) can red kidney beans, rinsed
    5 oz frozen sweet corn
    2 tbsp tomato paste
    1 cup beef stock
    1/4 cup grated pizza cheese
    6 oz tortilla chips
Preparation
    Preheat oven to 350\u00b0F. Grease a large baking dish.
    Heat oil in a frying pan over medium heat. Cook onion, garlic and spices, stirring, for 3 mins, or until onion softens. Add ground pork and cook, stirring, for 5 mins, until browned. Add tomatoes, beans, sweet corn, tomato paste and stock. Simmer, uncovered, for 10 mins, or until mixture thickens slightly. Transfer to prepared dish and sprinkle with 1/2 the cheese. Bake for 10-12 mins, until golden brown and bubbly.
    Meanwhile, arrange tortilla chips on a baking tray. Sprinkle with remaining cheese and bake for 5-8 mins, or until cheese melts. Serve chili con carne with cheesy nachos.
