Beef, Vegetable And Lima Bean Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    10.5 oz beef chuck roast, cubed
    1 None leek, sliced
    1 stalk celery, sliced
    2 cloves garlic, minced
    2 None small red chilies, finely chopped
    2 cups beef stock
    2 None carrots, chopped
    2 (13.5 oz) cans lima beans, drained, rinsed
    4 None tomatoes, chopped
    1/2 head cauliflower, cut into florets
    1/2 head broccoli, cut into florets
    1 None zucchini, sliced
    2 oz green beans, trimmed, sliced
    2 tbsp fresh parsley, chopped
Preparation
    In a large saucepan, heat oil over high heat. Brown beef for 2-3 mins. Set aside. Add leek, celery, garlic and chilies. Saute for 2-3 mins, until leek is tender. Return beef to pan along with stock and carrots. Bring to a boil, reduce heat and simmer for 10-15 mins. Add remaining vegetables and simmer for 10-15 mins, until vegetables are just tender. Add parsley and serve.
