Peanut Brittle And Chocolate Frozen Dessert - cooking recipe

Ingredients
    1 1/4 cups sugar
    1/2 cup light corn syrup
    1 cup chopped salted peanuts
    3 tbsp butter, softened
    1 tsp baking soda
    2 qts vanilla ice cream
    1/4 cup unsweetened cocoa powder
    None None Caramel sauce, to serve
Preparation
    Line a baking pan with parchment paper.
    Place sugar, syrup and 1/4 cup of water in a medium saucepan on low heat. Stir until sugar dissolves. Add peanuts. Boil 8-10 mins, until just beginning to turn golden.
    Quickly stir in butter and baking soda. Pour onto prepared pan. Cool. Break brittle into pieces. Process 1/2 of the brittle in a food processor into large crumbs.
    Line an 8 x 4 inch loaf pan with plastic wrap, extending above sides.
    Spoon 1/2 the ice cream into a bowl and stir in brittle crumbs. Spoon into pan. Smooth top and freeze 30 mins, until firm.
    Place remaining ice cream into a mixing bowl. Beat in cocoa with an electric mixer until well combined. Spoon into loaf pan. Cover with plastic wrap and freeze overnight.
    Invert dessert onto serving platter and remove plastic wrap. Serve in slices, drizzled with sauce and sprinkled with brittle pieces.
