Fruity Rice Salad - cooking recipe
Ingredients

10.5 oz brown rice, cooked and cooled
4 None spring onions, finely sliced on the diagonal
2/3 cup dried apricots, diced
2/3 cup pistachios, toasted, roughly chopped
2 tbsp finely chopped fresh thyme
2 None oranges, zested and juiced
Preparation

Combine all ingredients in a bowl and season to taste. Toss well to combine.
