Lemongrass Beef And Noodles - cooking recipe

Ingredients
    2 tbsp lime juice
    1 tbsp soy sauce
    1 tbsp fish sauce
    1 tsp brown sugar
    1 lb sirloin steak, trimmed, thinly sliced
    1 None long red chili, seeded, chopped
    1 stalk lemongrass, white part only, finely chopped
    1 bunch choy sum, trimmed, leaves shredded, stalks halved
    7 oz glass noodles, soaked in boiling water for 5 mins, drained
    2 tbsp unsalted peanuts, chopped
    1 None lime, quartered, to serve
Preparation
    Combine lime juice, soy sauce, fish sauce and brown sugar. Set aside.
    Heat a wok or large frying pan over high heat. Lightly coat with oil. Working in batches, stir-fry beef for 2-3 mins, until browned. Set aside. Add chili and lemongrass. Stir-fry for 1 min. Add choy sum stalks and 2 tbsp water. Stir-fry for 1-2 mins. Add noodles, beef, sauce and choy sum leaves. Stir-fry for 2 mins, until coated. Sprinkle with chopped peanuts and serve with lime halves.
