Cherry And Nut Coffee Cake - cooking recipe

2 medium eggs
1 tsp vanilla extract
1 1/4 cups sugar
1 1/2 cups buttermilk

4 1/3 cups all-purpose flour
2 tsp baking powder
2 tbsp vanilla-flavored pudding powder
3/4 cup hazelnuts, chopped
50 oz jarred or canned cherries, drained
1/2 cup heavy cream
1 tbsp confectioners' sugar
1 tbsp chopped walnuts (or hazelnuts or flaked almonds), toasted
Preparation

Preheat the oven to 325\u00b0F. Using a hand-held mixer, whip together the eggs with the vanilla and sugar until thick and creamy. Beat in the the buttermilk and orange zest, then stir in the flour, baking powder, and pudding powder.
Fold in the hazelnuts and cherries then spread the mixture out in a 10 1/2-by-15 1/2-inch jelly roll pan, lined with parchment. Bake for about 30 mins. Leave to cool for a few mins in the pan.
Spread the cream over the top while the cake is still warm; then cool completely. To serve, sprinkle with confectioners' sugar and nuts.
