Spicy Chicken Fillet With Honey Beer Reduction And Vegetables - cooking recipe

Ingredients
    1 cup beer
    4 tbsp soy sauce
    2 tbsp cayenne
    4 tbsp Dijon mustard
    2 tbsp honey
    2 tbsp oil + 1 tsp
    4 None shallots, peeled and finely sliced
    4 None chicken breasts
    1 lb green beans, halved
    1 lb thin carrots, peeled and coarsely chopped
    1 tsp butter
    2-3 sprigs fresh flat-leaf parsley, finely chopped
Preparation
    Combine beer, soy sauce, cayenne, mustard and honey. Heat 1 tsp oil in a saucepan and saute shallots for 1-2 mins. Add beer mixture and cook over low heat until syrupy. Season.
    Meanwhile, heat remaining oil in a pan and saute chicken breasts over medium heat, turning as necessary, for about 10 mins. Cook beans in boiling salted water for about 6 mins, add carrots and cook for another 4 mins. Drain, toss in butter and season to taste.
    Pour a little beer reduction over chicken then slice and serve with vegetables. Sprinkle with parsley and serve remaining reduction on the side.
