Spinach And Cheese Quesadillas - cooking recipe

Ingredients
    1/2 cup low fat cottage cheese
    2 cups loosely packed baby spinach leaves
    1 None avocado, finely chopped
    1/2 cup canned kidney beans, rinsed and drained
    1/2 cup canned corn kernels, rinsed and drained
    1 None tomato, seeded and finely chopped
    1 None red onion, finely chopped
    1 None zucchini, coarsely grated
    8 small (6-inch) flour tortillas
    1/2 cup coarsely grated reduced fat mozzarella cheese
    2 tbsp cilantro leaves
Preparation
    Blend or process the cottage cheese and spinach until smooth.
    Combine the avocado, beans, corn, tomato, onion and zucchini in a medium bowl.
    Preheat the broiler.
    Place four tortillas on a large baking pan. Spread the spinach mixture on the tortillas, leaving a 3/4-inch border around the edge. Spread the avocado mixture over the spinach mixture. Top with the remaining tortillas. Sprinkle the mozzarella over the quesadilla stacks.
    Broil quesadillas until lightly browned. Serve sprinkled with cilantro.
