Stir-Fried Mussels And Rice - cooking recipe

Ingredients
    2 tbsp peanut oil
    2 None spring onions, sliced
    1 None long red chili, chopped
    2 cloves garlic, chopped
    1 tsp fresh ginger, grated
    1 1/2 lb mussels, scrubbed, beards removed
    1/4 cup oyster sauce
    2 tbsp light soy sauce
    2 tsp sugar
    1/2 cup fish stock
    1/2 cup fresh cilantro leaves
    None None steamed rice, to serve
Preparation
    Heat oil in a wok or large frying pan over high heat. Stir-fry onions, chili, garlic and ginger for 1 min, until fragrant. Add mussels, oyster sauce, soy sauce and sugar. Stir-fry for 1 min. Add stock, cover and steam for 2-3 mins, until mussels open.
    Sprinkle with cilantro leaves. Serve with steamed rice.
