Spicy Chickpea And Herb Salad - cooking recipe

Ingredients
    3 tbsp olive oil
    1/2 tsp fennel seeds
    2 None onions, diced
    2 None garlic cloves, crushed
    4X15 oz canned chickpeas, drained and rinsed
    4X15 oz canned, peeled plum tomatoes
    1/2-1 tsp cayenne pepper
    1/2 tsp cinnamon
    1/2-1 tsp sugar
    1 cup chopped fresh parsley
    2/3 cup chopped fresh mint
    None None Flatbread, to serve
Preparation
    Heat the olive oil in a pan. Add the fennels seeds, onions and garlic and saute for 3-4 mins, stirring. Mix in the chickpeas, canned tomatoes, cayenne pepper, cinnamon and sugar and season with salt. Bring to a boil and simmer for 10-12 more mins.
    Remove from the heat and set aside to cool for 5-10 mins. Fold in the parsley and mint then transfer to a serving bowl. Serve with flatbread.
