Baked Eggs In Red Pepper And Tomato Sauce - cooking recipe

2 tbsp olive oil
2 medium onions, diced
1 clove garlic, finely chopped
6 oz chorizo sausage, sliced
1 large red pepper, thinly sliced
1 None mild green chili pepper, thinly sliced
1 can (29 oz) diced tomatoes
1 pinch sugar
1 bunch parsley, chopped
6 None eggs
Preparation

Preheat the oven to 350\u00b0F. Heat the oil in an ovenproof skillet on medium heat. Add the onions, garlic and sausage and saute for about 10 mins until the onions are soft. Add the red pepper, chili pepper and tomatoes and cook for 5 mins, breaking the tomatoes with a spoon. Add a pinch of sugar and season to taste. Sprinkle most of the parsley over the sauce, reserving some for the garnish. Carefully break the eggs into the sauce, making sure they are evenly spaced.
Bake for about 10 mins. Sprinkle with the reserved parsley. Serve with bread.
