Coriander Chicken With Baby Vegetables - cooking recipe

Ingredients
    3 tbsp olive oil
    4 (6 oz) chicken breasts, skin removed
    6 oz baby onions, halved
    2 cloves garlic, minced
    1 tbsp ground coriander
    2 tbsp all-purpose flour
    2 tbsp honey
    1 None lemon, zested and juiced
    2 cups chicken stock
    6 oz baby zucchini, halved
    6 oz baby carrots, trimmed, halved
    3 tbsp fresh cilantro, chopped
    None None couscous dusted with paprika, to serve
Preparation
    Heat 2 tbsp oil over high heat. Sear chicken for 8-10 mins, until browned. Set aside. Add remaining oil. Cook onions for 2-3 mins. Add garlic, coriander and flour. Cook for 1 min. Add honey, lemon zest, lemon juice and stock. Bring to a boil then return chicken to pan. Cover and simmer for 20 mins. Add zucchini and carrots. Simmer for 15 mins.
    Fold in cilantro. Serve hot with couscous.
