Roasted Tomatoes With Basil - cooking recipe

Ingredients
    1 lb baby tomatoes
    2 cloves garlic, thinly sliced
    1 tbsp olive oil
    2 tsp balsamic vinegar
    None None vegetable oil, for deep-frying
    1/3 cup loosely packed fresh basil leaves
Preparation
    Preheat oven to 350\u00b0F.
    Arrange tomatoes on a baking tray. Combine garlic, oil and vinegar then pour over tomatoes and season to taste. Roast for 10 mins, or until tomatoes soften.
    Meanwhile, heat vegetable oil in a small saucepan. Deep-fry basil until crisp. Drain on paper towels.
    Serve tomatoes sprinkled with fried basil.
