Roasted Cilantro Lime Salmon - cooking recipe

Ingredients
    4 x 6.5 oz salmon fillets
    1 bunch baby bok choy
    1 tbsp vegetable oil
    2 tbsp light soy sauce
    1 None lime, zested and juiced
    2 tbsp cilantro, chopped
Preparation
    Preheat the oven to 425\u00b0F. Line a baking sheet with parchment paper. Place the salmon on the sheet, skin side down, and season to taste. Roast for 10-13 mins, until cooked to taste.
    Meanwhile, in a saucepan of boiling water, cook the bok choy for 2 mins, until just wilted. Drain.
    Combine the remaining ingredients and drizzle over the salmon. Serve the fish with the bok choy.
