Cilantro Chicken Salad - cooking recipe

Ingredients
    1 bunch cilantro, leaves stripped from stems, stems reserved
    4 cups chicken stock
    1/4 cup light soy sauce
    1/2 inch piece fresh root ginger, peeled, sliced
    2 cloves garlic, sliced
    1 lb chicken breast fillets
    2 None cucumbers, shredded
    3 stalks celery, cut into thin strips
    1 tsp sesame seeds, toasted
    1/2 tsp chili flakes
Preparation
    Place cilantro stems in a saucepan with stock, soy sauce, ginger and garlic. Bring to a boil, reduce heat and simmer for 10 mins.
    Add chicken and simmer on very low heat for 10 mins. Remove pan from heat and set aside for 30 mins for flavours to thoroughly infuse chicken.
    Place cilantro leaves, cucumber, celery, sesame seeds and chili flakes in a bowl. Remove chicken from stock and shred meat. Add to cucumber mixture with 1 tbsp stock and toss to combine. Serve.
