Beef With Ramen And Mushrooms - cooking recipe

Ingredients
    8 None dried shiitake mushrooms
    2 tbsp peanut oil
    1 lb beef strips
    4 None green onions, thinly sliced
    2 cloves garlic, crushed
    1 piece (1/2 inch) ginger, grated
    4 cups beef stock
    1 tbsp light soy sauce
    2 tbsp rice wine
    6 oz fresh ramen noodles or other fresh Asian noodles
Preparation
    Place mushrooms in small heatproof bowl; cover with boiling water. Let stand 20 mins; drain. Discard stems; slice caps thinly.
    Heat half the oil in a large saucepan on high heat. Cook beef, in batches, until browned all over. Remove from pan.
    Heat remaining oil in same pan. Cook half the onion with garlic and ginger, stirring, until onion softens. Add stock, 3 cups water, soy sauce and wine; bring to a boil.
    Add mushrooms, beef and noodles; bring to a boil. Reduce heat to low; simmer, uncovered, about 5 mins or until noodles are tender.
    Divide soup among serving bowls; sprinkle with remaining onion.
