Chicken And Rice Soup With Mint - cooking recipe

Ingredients
    1 None large chicken
    1 None large onion, finely chopped
    8 cups chicken stock or water
    2 oz basmati rice, rinsed, drained
    1/3 cup lemon juice
    3 tbsp fresh mint leaves, shredded
    None None bread, to serve
Preparation
    Place chicken, onion and 1 tsp salt in a large saucepan. Cover with stock. Simmer for 45-50 mins, until chicken is tender. Remove chicken. Let cool then cut flesh into thin strips.
    Add rice to stock. Simmer for 20 mins. Add chicken strips, lemon juice and mint. Serve with bread.
