Apricot Tarte Tatin - cooking recipe

Ingredients
    6 tbsp unsalted butter, chopped
    1/3 cup brown sugar
    2 (13.5 oz) cans apricot halves, drained
    1 sheet frozen puff pastry, thawed, corners cut off to form a disc
    None None vanilla ice cream, to serve
Preparation
    Preheat oven to 350\u00b0F. Melt butter in an 8 inch ovenproof frying pan over medium heat until foamy. Add sugar, stirring until dissolved. Add apricots, cut-side up and cook for 5 mins, or until mixture starts to caramelise. Cool slightly.
    Place puff pastry on top of apricots, tucking dough in around edges. Bake for 15-20 mins, or until golden. Let cool for 5 mins then carefully invert onto a serving plate. Serve with ice cream.
