Bacon Gnocchi With Meatballs - cooking recipe

Ingredients
    1 lb ground beef
    2 tbsp parsley, chopped
    1 None onion, finely chopped
    2 tbsp breadcrumbs
    1 lb potato gnocchi
    1 bunch spring onions, sliced, bulbs and stems separated
    2.75 oz bacon, sliced
    2 tbsp olive oil
    1 tbsp all-purpose flour
    1 cup vegetable stock
    1/3 cup heavy cream
Preparation
    Mix together the beef, parsley, onion, and breadcrumbs and season to taste. Use hands to shape the mixture into 8 meatballs, and flatten slightly.
    Prepare gnocchi according to package instructions.
    Fry the bacon in a dry frying pan until crisped. Transfer to a plate. Add the oil to the pan and fry the meatballs for 5 minutes on each side or until cooked through. Transfer to a plate and keep warm.
    Add the bulbs of the spring onions to the pan and fry for 1 minute. Blend in the flour. Gradually add the stock, stirring well until no lumps remain. Add the cream and bring to a boil, stirring. Season to taste.
    Stir the drained gnocchi and the bacon into the sauce and transfer to warmed serving plates with the meatballs. Serve sprinkled with the spring onion stems.
