Prosciutto, Fava Bean And Mozzarella Salad - cooking recipe

Ingredients
    12 None thin slices olive sourdough bread
    2 tbsp plus 1/4 cup extra virgin olive oil
    1 lb fresh fava beans
    1 clove garlic, crushed
    1 tbsp finely chopped fresh mint, plus additional leaves, for garnish
    2 tbsp finely chopped fresh chives
    1 tbsp lemon juice
    12 None thin slices prosciutto
    6 None mini mozzarella balls, halved
Preparation
    Preheat the oven to 325\u00b0F. Put the bread on a baking pan and brush with 2 tbsp of the olive oil. Bake until crisp.
    Bring a large saucepan of salted water to a boil. Cook fava beans for 3-4 mins. Drain; peel the outer skin from the fava beans.
    Combine garlic, mint, chives, lemon juice and 1/4 cup olive oil in a medium bowl. Season with sea salt and freshly ground black pepper. Add fava beans; toss to combine.
    Arrange prosciutto and mozzarella on a serving plate. Spoon fava bean mixture on the plate. Garnish with additional mint leaves and serve with toasted olive bread.
