Fettuccine Bolognese - cooking recipe

Ingredients
    2 tbsp olive oil
    2 None large Spanish onions, finely chopped
    4 cloves garlic, minced
    3 1/3 lb ground beef
    1/2 cup tomato paste
    1 1/2 cup beef stock
    8 cups canned diced tomatoes
    3 tbsp finely chopped fresh oregano leaves
    13.5 oz fettuccine
    1/3 cup flaked Parmesan cheese
Preparation
    In a large saucepan, heat oil over medium heat. Cook onions and garlic, stirring, until onion softens. Add beef and cook, stirring, until browned. Add tomato paste, beef stock and tomatoes. Bring to a boil then reduce heat and simmer, covered, for 30 mins. Uncover and simmer for another 45 mins, or until sauce is thickened. Remove from heat and stir in oregano. Season to taste.
    Meanwhile, cook pasta in boiling salted water until al dente then drain.
    Add 6 cups bolognese to pasta and toss to combine. Reserve remaining sauce for another use. Transfer pasta to serving bowls and top with Parmesan cheese.
