Dairy-Free Apple Muffins - cooking recipe

1 None egg, lightly beaten
1 cup soy milk
1/2 cup vegetable oil
1 1/2 cups self-rising flour
1/2 cup flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
2 None Granny Smith apples, cored, 1 finely chopped, 1 thinly sliced
3/4 cup firmly packed brown sugar
1 tbsp granulated sugar
Preparation

Preheat the oven to 350\u00b0F. Lightly grease a 12-cup muffin pan or line it with paper liners.
Combine egg, soy milk and oil in a medium bowl. Sift flours, baking soda and 1 tsp cinnamon into a large bowl. Stir in chopped apple, brown sugar and egg mixture until just combined (do not overmix).
Spoon mixture into prepared pan. Top with sliced apple.
Bake 20 mins, or until lightly browned and springy to touch.
Combine granulated sugar and remaining 1/2 tsp cinnamon. Sprinkle hot muffins with cinnamon sugar. Cool in pan 5 mins. Remove from pan; cool on wire rack. Serve muffins warm or at room temperature.
