Blackberry Cream With Honey Wafers - cooking recipe

    None None Honey Wafers
    1/4 cup unsalted butter, melted
    1/3 cup sugar
    1/4 cup all-purpose flour
    1 None large egg white
    1 tbsp honey
    None None Blackberry Cream
    1 cup mascarpone
    1/2 cup heavy cream
    2 tbsp powdered sugar, plus extra to dust
    9 oz blackberries
Preparation
    Preheat the oven to 350\u00b0F. Line 3 baking sheets with parchment paper.
    To make the honey wafers, place all the ingredients in a food processor. Pulse until smooth and well combined. Spread the batter onto the prepared baking sheets to form eight 4-inch rounds. Bake for 8-10 mins, until golden. Leave to cool on the baking sheets.
    For the blackberry cream, mix together the mascarpone, cream and powdered sugar until smooth, then stir in the blackberries. Place a wafer on each serving plate and top with a spoonful of blackberry cream. Cover with another wafer, dust with powdered sugar and serve.
