Carrot Cake With Cream Cheese Frosting - cooking recipe

3 None eggs
3/4 cup brown sugar
3/4 cup vegetable oil
1/2 cup self-rising flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp pumpkin pie spice
7 oz grated carrot
1 cup walnuts, chopped
1 tsp vanilla extract
None None Cream Cheese Frosting
1/4 lb cream cheese, chopped, softened
4 tbsp butter, chopped, softened
1/2 cup powdered sugar
1 tsp vanilla extract
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line an 8 inch round cake pan.
Whisk together eggs, sugar and oil. Sift flour, baking soda and spices together then fold in. Mix in grated carrot, walnuts and vanilla until combined. Transfer to prepared pan and bake for 50-55 mins, until a skewer inserted in the center comes out clean. Let cool in pan then transfer to a wire rack and let cool completely.
Meanwhile, to make the frosting, beat cream cheese, butter, powdered sugar and vanilla together until smooth. Spread over cake. Serve in wedges.
