Pasta With Tuna And Mushrooms - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, peeled and finely chopped
    7 oz closed cup mushroom, sliced
    1 tbsp tomato paste
    14 oz large pasta shells
    1 1/4 cup heavy cream
    14 oz canned tuna in oil, drained and flaked
    1 None lemon, zest finely grated and juiced
    1 tbsp parsley, chopped
    1/4 cup grated parmesan
Preparation
    Heat the oil in a large frying pan over a high heat. Saute the onion for 2-3 mins, until tender. Add the mushrooms and saute for a further 3-4 mins, until golden. Next stir in the tomato paste.
    Meanwhile, cook the pasta in a large saucepan of boiling salted water, following the packet instructions. Drain, reserving 1/3 cup of the pasta water.
    Pour the cream into the pan with the mushrooms and simmer for 1-2 mins, until thickened slightly.
    Add the pasta and the reserved liquid, the tuna, zest and juice. Season to taste and toss well. Toss the parsley and parmesan through, and serve.
