Strawberry Ice Cream Bars - cooking recipe

Ingredients
    9 oz un-iced plain chocolate cookies
    7 tbsp butter, melted
    4 cups strawberry ice cream, slightly softened
    3.5 oz strawberries, finely chopped, plus extra to serve
    1.75 oz dark baking chocolate, melted
Preparation
    Grease and line base and sides of a 7x18 inch freezer-safe dish with parchment paper, extending paper at long sides for handles.
    Process cookies to make fine crumbs. Add butter and process until combined. Press cookie mixture evenly over base of prepared dish. Chill for 5 mins.
    Combine ice cream and chopped strawberries in a large bowl. Spoon ice cream mixture over cookie base and smooth surface. Drizzle melted chocolate over ice cream. Freeze 4 hours, or until firm. Cut into squares and serve with extra strawberries.
