400 g flour
150 g sugar
125 g butter, softened
1 None medium egg
230 ml milk
21 g yeast
1 tsp ground cinnamon
340 g cherry jam
150 g icing sugar
Preparation

To make the dough, sift the flour into a bowl with a pinch of salt. Add 2 tbsp of sugar, 5 tbsp butter and the egg. Meanwhile, heat 2/3 cup of the milk in a saucepan, and add the yeast, stirring until the yeast dissolves. Pour the yeast into the mixing bowl, then, with a food processor or your hands, mix the ingredients and knead until a smooth dough is formed. Cover the bowl and leave in a warm place for 30-40 mins. Meanwhile, mix the remaining sugar with the cinnamon in a bowl.
Preheat the oven to 400\u00b0F. Roll the dough out onto a floured work surface into a 24 x 12 inch rectangle. Cut the rectangle in half to make two 12 x 6 inch pieces, and place both halves on baking sheets that have been lined with parchment paper. Next, melt the butter in a small saucepan.
To construct the strudel, spread the jam over the rectangles, then dust with a third of the cinnamon sugar. Take one long side of the dough and fold it over about 2 inches. Do the same on the other side. You should be left with a line of cherry jam that is about 2 inches wide running down the middle of the dough. Brush the dough with the rest of the butter and dust with the cinnamon sugar.
Bake in the oven for about 15 mins, then allow to cool on a wire rack. Meanwhile, mix the powdered sugar with the rest of the milk to make the icing. Drizzle the icing over the pastry then allow to cool. Cut each half into 7 strips and serve.
