Creamy Chicken, Bacon And Mushroom Casserole - cooking recipe

4 None chicken breasts
8 slices bacon
3 tbsp oil
1 lb mushrooms, sliced
1 None onion, diced
1 tsp smoked paprika
1 pinch granulated sugar
3/4 cup heavy cream
1 2/3 cup vegetable stock
2 tbsp cornstarch, mixed with a little water to make a slurry
1/4 lb Cheddar cheese, grated
None None fresh parsley, to garnish
Preparation

Preheat the oven to 400\u00b0F. Grease a baking dish with oil. Season the chicken and wrap 2 pieces of bacon around each breast. Heat 2 tbsp oil in a large frying pan, add the chicken and sear, turning for 4-5 mins. Remove from the pan and place in the baking dish.
Add 1 tbsp oil to the pan then add the mushrooms and onions. Saute for 2-3 mins then stir in the paprika and sugar and season. Pour in the cream and stock and bring to a boil. Mix the cornstarch slurry into the pan and simmer, stirring, until thickened.
Pour the mushroom sauce over the chicken. Sprinkle with cheese then bake for 20-25 mins. Sprinkle with parsley then serve.
