Chocolate Cookie Sandwiches With Raspberry Filling - cooking recipe

Ingredients
    1 1/3 cups butter, at room temperature
    1/2 cup sugar
    1 tbsp corn syrup
    1 cup all purpose flour
    1 cup rice flour
    1/3 cup cocoa powder
    1 tbsp shredded coconut
    1 cup + 1 tbsp powdered sugar
    1/4 cup raspberry jam
    2 tsp milk
Preparation
    Preheat oven to 300\u00b0F. Line a baking sheet with parchment paper.
    Using an electric mixer, beat butter, sugar and corn syrup in a medium bowl until light and creamy. Add flours, cocoa powder, coconut and 1 cup powdered sugar and beat until just combined.
    Turn on to a lightly floured work bench and gently knead until mixture comes together. Cover and chill for 30 mins.
    Roll dough on a lightly floured surface to 1/4 inch thick. Using a pastry cutter, cut dough into rounds and place on prepared tray. Bake for 20 mins or until firm to the touch. Cool cookies on tray.
    Combine remaining powdered sugar, jam and milk in a small bowl and stir mixture until smooth. Make sandwiches with two cookies and the raspberry mixture.
