Banana Nut Fritters - cooking recipe

Ingredients
    1 cup self-rising flour
    1/2 cup rice flour
    1/4 tsp baking soda
    3/4 cup plus 1 tbsp flaked coconut
    1/4 cup granulated sugar
    1 cup club soda
    1 cup coconut milk
    4 None ripe bananas, peeled, halved crosswise
    None None Oil, for deep-frying
    None None Powdered sugar, for dusting
    None None Lime peel, vanilla ice cream, to serve
    1/4 cup mixed nuts, chopped
    2 tbsp butter, softened
    2 tsp brown sugar
Preparation
    Sift flours and baking soda into a large bowl. Stir in 3/4 cup coconut and granulated sugar. Whisk in combined club soda and coconut milk until smooth. (Ad additional club soda if batter is too thick.)
    For the filling, mix nuts, butter, 1 tbsp coconut and brown sugar in a small bowl.
    Using a small knife, cut a lengthwise slit into each banana half, to make a small pocket. Push a small amount of filling into each, being careful not to overfill.
    Heat oil in a medium saucepan on high heat until a small amount of batter sizzles as soon as it is added (350\u00b0F).
    Working in batches of 3-4, dip banana into batter, allowing excess to drain off. Deep-fry 2-3 mins, turning, until golden. Drain on paper towel. Dust with powdered sugar and sprinkle with lime peel. Serve with ice cream.
