Quick Beef Salad With Citrus Dressing - cooking recipe

Ingredients
    None None Citrus Dressing
    2 tbsp brown sugar
    1/4 cup lime juice
    1 tbsp fish sauce
    None None red chili, deseeded, finely chopped
    None None Beef Salad
    9 oz rice vermicelli noodles
    1 None baby cucumber, halved, sliced
    1 None large carrot, peeled, shredded
    3 tbsp fresh mint leaves, plus extra, to serve
    1/4 cup fresh cilantro leaves, plus extra, to serve
    1 lb thick sirloin steak, thinly sliced
    1 tbsp chopped toasted peanuts (optional)
Preparation
    To make the dressing, combine all ingredients in a bowl. Set aside.
    Cover noodles with boiling water. Let stand for 5 mins then drain and rinse. Toss with vegetables, herbs and dressing. Set aside.
    Heat a large nonstick wok or frying pan over high heat. Stir-fry beef quickly, until browned. Pile beef over noodles. Serve topped with extra herbs and peanuts, if desired.
