Penne Bolognese With Orange - cooking recipe

Ingredients
    1 package penne pasta (16 oz)
    1 tbsp olive oil
    3 oz pancetta
    1 None onion, peeled and chopped
    1 lb ground beef
    2/3 cup fresh orange juice
    1 can diced tomatoes (14.5 oz)
    1/2 cup vegetable stock
    2 tbsp tomato paste
    7 sprigs thyme, leaves picked (reserving a few sprigs to garnish)
    1-2 tsp chili powder (optional)
    None None Parmesan shavings, to serve
    1 None orange, cut into wedges, to serve, plus zest, to garnish (optional)
Preparation
    Cook the pasta according to the packet directions. Drain.
    Meanwhile, heat the oil in large, deep pan, add the pancetta and onion and saute for 2-3 mins, until the onion has started to soften.
    Add the ground beef to the pan and cook for 3-4 minutes until browned, stirring with a wooden spoon to break up the beef. Add the orange juice, tomatoes, stock, and tomato paste and stir to combine. Simmer for 5-7 minutes. Add the thyme, and chili powder (if using) and cook for 1 more minute. Season to taste with salt and freshly ground black pepper.
    Add the pasta to the sauce and mix until the pasta is coated. Place in serving dishes and garnish with Parmesan shavings, orange wedges, the extra thyme sprigs, and orange zest (if using).
