Chicken Wings With Satay Sauce - cooking recipe

12 None chicken wings
1/4 cup crunchy peanut butter
3/4 cup coconut milk
4 tbsp sweet chili sauce
8 tsp soy sauce
3 tbsp lemon juice
9 oz mixed greens
1/2 None small Chinese cabbage, finely shredded
3 None green onions, thinly sliced diagonally
7 oz long-grain white rice, cooked

Preheat oven to 425\u00b0F. Grease a large roasting pan.
Arrange chicken wings in roasting pan. Combine peanut butter, coconut milk, 2 tbsp chili sauce, 2 tsp soy sauce and 1 tbsp lemon juice in a small saucepan over low heat. Cook for 2-3 mins, or until heated through and smooth. Pour 1/2 satay sauce over chicken and toss to coat. Cover with foil and bake for 10 mins. Remove foil and bake for 10 mins, or until chicken is cooked through.
Meanwhile, arrange mixed greens, cabbage and green onions in a large bowl. Combine remaining chili sauce, soy sauce and lemon juice then pour over salad and toss to combine.
Serve chicken with salad, remaining satay sauce and rice.
