Harissa Halloumi Burgers With Lemon Mint Mayonnaise - cooking recipe

Ingredients
    1/4 cup olive oil
    1 medium onion, sliced
    1/2 cup mayonnaise
    2 tbsp finely chopped fresh mint
    1 tsp lemon juice
    1 loaf ciabatta
    12 oz halloumi cheese, halved horizontally
    2 tsp harissa paste
    2 medium tomatoes, sliced
    1 cup spring mix salad
Preparation
    Heat 1 tbsp of the oil in a large skillet on medium heat. Cook onion, stirring occasionally, 8 mins or until softened. Remove from pan; cover to keep warm.
    Meanwhile, for the lemon mint mayonnaise, combine mayonnaise, mint and lemon juice in a small bowl.
    Heat a grill pan on high heat. Trim ends from bread; cut remaining bread into quarters then halve pieces horizontally. Spray cut sides of bread with no stick cooking spray. Place bread, cut-side down, in pan for 30 seconds until charred and toasted.
    Combine halloumi, harissa and remaining oil in a medium bowl. Heat skillet on high heat; cook halloumi 1 min each side or until golden.
    Spread bread with mayonnaise. Sandwich with tomato, salad, halloumi and onion.
