Teriyaki Chicken And Cashew Stir Fry With Noodles - cooking recipe

16 oz Hokkien noodles
2 tbsp peanut oil
2 1/4 lb chicken thigh fillets, sliced thinly
1 None medium onion, sliced thinly
1 clove garlic, minced
1 (3/4 inch) piece fresh ginger, grated
1 None medium red pepper, sliced thinly
1 tbsp brown sugar
2 tbsp soy sauce
1/2 cup teriyaki sauce
1 lb choy sum, chopped coarsely
2/3 cup unsalted roasted cashews
Preparation

Place noodles in a large heatproof bowl and cover with boiling water. Separate noodles with a fork and drain.
Heat 1 tbsp oil in a wok over medium heat. Stir-fry chicken for 1-3 mins, or until browned lightly. Remove from pan and cover to keep warm.
Add remaining oil to wok. Stir-fry onion, garlic, ginger and pepper for 2 mins, or until onion is just tender.
Return chicken to wok along with sugar, soy sauce, teriyaki sauce and choy sum. Stir-fry for 2-3 mins, or until chicken is cooked through and choy sum is wilted.
Add noodles and 1/3 cup nuts. Toss gently until heated through. Serve topped with remaining nuts.
