Strawberry And Cream Parfait With Coconut Granola - cooking recipe

Ingredients
    1 cup rolled oats
    1/4 cup all-purpose flour, sifted
    1/4 cup granulated sugar
    1/4 cup desiccated coconut
    2 1/2 tbsp butter, chopped
    1/2 tbsp honey
    1/4 tsp baking soda
    1/2 cup heavy cream
    1 tbsp powdered sugar
    1 tsp coconut extract
    1/2 lb mascarpone cheese
    1/4 lb strawberries, hulled, quartered
Preparation
    Preheat oven to 325\u00b0F. Lightly grease a baking tray.
    Combine oats, flour, sugar and coconut. Melt butter and 1 tsp honey over low heat for 2-3 mins, until melted. Combine 2 tsp boiling water with baking soda then mix into butter mixture. Combine with dry ingredients and mix well. Transfer to prepared pan and bake for 8-10 mins, until golden. Let cool.
    Meanwhile, whip heavy cream, powdered sugar and coconut extract to soft peaks. Fold into mascarpone.
    Distribute 1/2 of granola between 4 dessert glasses. Drizzle with 1/2 of remaining honey. Top with a layer of strawberries. Spoon mascarpone mixture over top. Finish with remaining granola and honey. Chill until ready to serve.
