Chicken, Broccoli And Cauliflower Bake - cooking recipe
Ingredients

1 head small cauliflower, cut into small florets
1 lb broccoli, cut into small florets
2 tbsp oil
1 lb chicken breast fillet, cut into pieces
1 None medium onion, peeled and finely chopped
1 cup whipping cream
2 cups water
2 packets instant mushroom soup mix
1 oz fresh flat-leaf parsley, little reserved for garnish, remainder chopped
1 oz butter, diced
2 slices white bread, crumbled
Preparation

Preheat the oven to 400\u00b0F. Cook the cauliflower in boiling salted water for 3 minutes. Add the broccoli and cook for 5 minutes. Drain and refresh with cold water.
Heat the oil in a saucepan and fry the chicken until browned all over. Season with salt and black pepper and remove from the pan. Add the onion to the pan and saute until softened. Add the cream and 2 cups of water. Stir in the soup packets, bring to a boil and simmer for 2 minutes. Remove from the heat and stir in the parsley. Season with salt and black pepper.
Knead the butter and breadcrumbs together. Place the chicken, broccoli and cauliflower in an ovenproof serving dish and pour over the sauce. Bake for 10 minutes. Sprinkle over the breadcrumbs and bake for 15 mins. Garnish with parsley.
