Lemon And Mango Parfaits - cooking recipe

Ingredients
    4 None egg yolks + 2 whole eggs, separated
    1/3 cup granulated sugar
    2 None lemons, zested and juiced + extra zest, to garnish
    1 tbsp powdered gelatin, bloomed in cold water for 5-6 mins
    3/4 cup heavy cream
    2 None ripe mangoes, peeled, pitted, 4 tbsp finely diced, remainder pureed
Preparation
    Whisk 6 egg yolks with sugar until thick and creamy. Add lemon zest and juice. Mix 2 tbsp mixture with bloomed gelatin and gently heat until gelatin melts. Mix into main lemon mixture. Whip egg whites with heavy cream and a pinch of salt until stiff then fold in.
    Layer lemon mixture and mango puree into 4 serving glasses then decorate with reserved mango and lemon zest. Chill before serving.
